It was about 1300 years ago that people began making UME in Japan. At first, they were used as medicine by the upper class. UME has been a familiar food to the Japanese for 400 years now.
Our Nanko Ume has particularly excellent qualities for UME such as high production, thin skin, small seed and much flesh that’s made in the Kinan area. Nanko UME has been a No.1 brand of UME industry in Japan for a long time.
Required Ingredients:
Preparation – Place fresh ume in the freezer for 24hrs.
Day 1 – Layer frozen ume with rock sugar.
Each day – Agitate container to help dissolve sugar.
Day 3 – Juice begins to secrete from the ume.
˜Day 10 – Ume juice is ready.
Final step – Strain juice into a container and refrigerate.
TIP: Ume-shu will continue to improve with age! Up to 2 years will refine the flavor.
